Stony Brook University's SBU Eats fosters community through unique hospitality initiatives

At Stony Brook University, dining services aim to provide more than just meals. SBU Eats has introduced a program called "Together at the Table," designed to enhance community connections between students and dining staff. This initiative allows students to share stories of how staff members have positively influenced their lives through small acts of kindness or support.

Ken Ferro, director of operations at SBU Eats, conceived this program to gather student feedback on their experiences and expectations in dining locations. "The stories that we have been receiving are the moments that matter because they show us that SBU Eats isn’t just here to serve meals, they’re here to support students," Ferro said. The program will feature various events throughout the year aimed at fostering connections among students.

Ferro explained that these insights help improve student satisfaction by creating a welcoming atmosphere and offering diverse dining options. "Our goal is to make every dining experience at Stony Brook feel like home, where students feel valued and supported," he stated.

In response to student needs, SBU Eats recently added "Uproot Milk" dispensers at coffee and tea stations on campus. These offer alternatives such as oat milk, chocolate pea milk, and soy milk for those with dietary restrictions or preferences.

The dine-in locations also introduce ten new menu items weekly, which can be accessed via the Nutrislice app or venue screens. New offerings include honey sesame Brussels sprouts and tofu schnitzel with mushroom sauce.

For Thanksgiving, Ferro plans a special feast for students remaining on campus. East Side Dining will be transformed into a restaurant-style space with table linens and decorations. The event offers traditional Thanksgiving dishes alongside vegan options and Ferro's signature mocktails. "We want to create a space where students can come together, enjoy a comforting meal, and experience the spirit of the holiday in the company of their SBU Eats family," said Ferro.

SBU Eats continues to focus on making dining experiences at Stony Brook University supportive and joyful through its hospitality program.
